This wine received extended ferment to soften heavy mouth-filling tannins. Post-fermentation, the wine received 12-18 months in small French oak to stimulate rich, velvety flavours.

Further bottle aging to additionally promote tannin softening, bringing forth clove and cigar box flavours with integrated oaky notes.

Gorgeous premium fruit, fermented in small open vats allowing greater air flow and circulation. Hand plunged.

Fantastic dry cold vintage, brought forward massive tannins and a full-bodied dry finish for this wine. We allowed further bottle aging to mellow these tannins and create a more subtle rich flavour. Prior to bottling the wine had 12-18 months in small French oak barrels, perfectly complimenting the rich tannins and developing cigar-box and peppery spice undertones.

Hand-picked premium fruit, fermented in small open topped fermenters allowing greater air circulation. Hand plunged and aged in small French Oak for 12-18 months prior to bottling.

We have allowed further bottle aging in order for tannins to soften and mellow slightly giving a less fruit driven pallet, with heavier chocolate and spice notes coming forward.
